- 1 box chocolate cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1 cup crushed Oreo cookies
- 1 cup heavy cream
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Oreo cookies for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line your muffin tin with colorful cupcake liners.
- Combine the chocolate cake mix, eggs, water, and vegetable oil in a large bowl and mix until smooth.
- Fold in the crushed Oreo cookies until distributed throughout the batter.
- Divide the batter evenly into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool completely in the tin.
- Whip the heavy cream in a separate bowl until soft peaks form. Gradually add powdered sugar and vanilla, continuing to whip until stiff peaks form.
- Frost the cooled cupcakes generously with whipped cream and top with an additional Oreo cookie.
Notes
Cupcakes can be made up to 2 days in advance. Store in an airtight container to maintain freshness.
