Description

A delightful breakfast casserole filled with custardy bread, ripe bananas, and topped with warm maple syrup.


Ingredients

  • 6 slices of bread (preferably brioche or challah)
  • 2 ripe bananas, sliced
  • 4 eggs
  • 2 cups milk
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Butter (for greasing the dish)

Instructions

  1. Grease a 9×13-inch baking dish generously with butter.
  2. Cut the bread into cubes—about 1-inch pieces—and layer half of them in the bottom of the dish.
  3. Spread the banana slices evenly over the bread layer.
  4. Top with the remaining bread cubes.
  5. Whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and salt in a separate bowl.
  6. Pour the custard evenly over the bread layers, ensuring each piece gets soaked.
  7. Cover the dish tightly with aluminum foil and refrigerate overnight.
  8. Preheat your oven to 350°F (175°C) the next morning.
  9. Bake the casserole covered for 30 minutes, then remove the foil and bake for an additional 15 minutes until golden brown.
  10. Serve warm with a drizzle of maple syrup.
