Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and prepare your jelly roll pan by greasing it lightly and lining it with parchment paper.
- Beat the eggs and sugar: In a large bowl, beat together 4 large eggs and 1 cup of granulated sugar until the mixture becomes thick and pale.
- Combine dry ingredients: Sift together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt, then gently fold into the egg mixture.
- Mix in wet ingredients: Stir in 1/3 cup of milk and 1 teaspoon of vanilla extract until smooth.
- Divide the batter: Split the batter into two bowls. Color one with red gel food coloring and the other with blue.
- Layer the batters: Pour the red batter into the prepared pan, then drop spoonfuls of blue batter over it. Swirl together with a toothpick.
- Bake the cake: Bake for 12-15 minutes until a toothpick inserted comes out clean.
- Cool and roll: Let cool, then invert onto a powdered sugar-dusted kitchen towel.
- Add the filling: Spread whipped cream or frosting over the cake.
- Roll it up: Roll the cake tightly from one short end using the towel as a guide.
- Chill: Wrap in plastic wrap and chill in the refrigerator for at least an hour.
- Slice and serve: Slice into rounds and decorate with fresh strawberries and blueberries before serving.
