Description

A visually stunning cake featuring red, white, and blue colors with a light sponge and whipped cream, perfect for summer celebrations.


Ingredients

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • Red and blue gel food coloring
  • Whipped cream or frosting for filling
  • Fresh strawberries and blueberries for decoration

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and prepare your jelly roll pan by greasing it lightly and lining it with parchment paper.
  2. Beat the eggs and sugar: In a large bowl, beat together 4 large eggs and 1 cup of granulated sugar until the mixture becomes thick and pale.
  3. Combine dry ingredients: Sift together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt, then gently fold into the egg mixture.
  4. Mix in wet ingredients: Stir in 1/3 cup of milk and 1 teaspoon of vanilla extract until smooth.
  5. Divide the batter: Split the batter into two bowls. Color one with red gel food coloring and the other with blue.
  6. Layer the batters: Pour the red batter into the prepared pan, then drop spoonfuls of blue batter over it. Swirl together with a toothpick.
  7. Bake the cake: Bake for 12-15 minutes until a toothpick inserted comes out clean.
  8. Cool and roll: Let cool, then invert onto a powdered sugar-dusted kitchen towel.
  9. Add the filling: Spread whipped cream or frosting over the cake.
  10. Roll it up: Roll the cake tightly from one short end using the towel as a guide.
  11. Chill: Wrap in plastic wrap and chill in the refrigerator for at least an hour.
  12. Slice and serve: Slice into rounds and decorate with fresh strawberries and blueberries before serving.

Notes

Make-ahead preparation: Can be prepared a day in advance. Experiment with different colored batters or fillings.
