Description

A vibrant summer salad that combines sweet peaches, creamy cheesecake, and crunchy granola for a refreshing treat.


Ingredients

  • 4 cups fresh peaches, diced
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup granola (for topping)
  • 1/2 tsp cinnamon (optional)
  • Mint leaves (for garnish, optional)

Instructions

  1. Beat the softened cream cheese in a large bowl. Add the powdered sugar and vanilla extract, blending until smooth.
  2. Fold in the whipped cream until well combined.
  3. Add the diced peaches and gently stir until coated.
  4. Sprinkle cinnamon over the mixture if desired.
  5. Chill the salad in the refrigerator for about 30 minutes.
  6. Serve in bowls, topping with granola and mint leaves.

Notes

Make-ahead up to a few hours in advance, but add granola right before serving to keep it crunchy.
