Delicious Peach Cobbler Muffins that combine the flavors of summer peaches with a delightful muffin base and a crunchy streusel topping.

- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups fresh peaches, diced
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup oats
- 1/4 cup butter, softened
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together 1 cup of flour, 1 cup of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt in a large bowl.
- Whisk together 1/2 cup of milk, 1/2 cup of melted butter, and 2 large eggs in another bowl.
- Pour the wet ingredients into the dry ingredients and combine gently.
- Fold in the 1 1/2 cups of diced peaches.
- Create the streusel topping by mixing together 1/2 cup of brown sugar, 1/4 cup of flour, 1/4 cup of oats, 1/4 cup of softened butter, and 1 teaspoon of cinnamon.
- Fill the muffin cups about 2/3 of the way full with the batter and sprinkle the streusel topping generously.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool slightly in the pan before transferring to a wire rack.
Notes
Store muffins in an airtight container for up to three days, or freeze for longer storage. Reheat in the microwave or oven.
