- Vegetables of your choice: bell peppers, carrots, broccoli
- Chopped peanuts for garnish
- Chopped green onions for garnish
Instructions
- Cook the noodles by boiling water and adding the noodles according to package instructions, then drain and set aside.
- Make the peanut sauce by combining peanut butter, soy sauce, honey, rice vinegar, minced garlic, and sesame oil in a bowl; whisk until smooth.
- Combine the cooked noodles, shredded chicken, and vegetables in a large pan.
- Add the peanut sauce over the noodles and toss to coat everything evenly.
- Serve hot, garnished with chopped peanuts and green onions.
Notes
For a vegetarian option, substitute chicken with tofu or tempeh. The peanut sauce can be prepared in advance and stored in the fridge for up to a week.
