Description

A creamy, flavorful dish of chicken and noodles coated in a rich peanut sauce, perfect for a comforting weeknight dinner.


Ingredients

  • 200g noodles
  • 150g chicken breast, cooked and shredded
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1 tablespoon sesame oil
  • Vegetables of your choice: bell peppers, carrots, broccoli
  • Chopped peanuts for garnish
  • Chopped green onions for garnish

Instructions

  1. Cook the noodles by boiling water and adding the noodles according to package instructions, then drain and set aside.
  2. Make the peanut sauce by combining peanut butter, soy sauce, honey, rice vinegar, minced garlic, and sesame oil in a bowl; whisk until smooth.
  3. Combine the cooked noodles, shredded chicken, and vegetables in a large pan.
  4. Add the peanut sauce over the noodles and toss to coat everything evenly.
  5. Serve hot, garnished with chopped peanuts and green onions.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh. The peanut sauce can be prepared in advance and stored in the fridge for up to a week.
