Description

A vibrant and refreshing salad that combines fresh vegetables with a zesty lime dressing, perfect for summer gatherings.


Ingredients

Scale
  • 2 cups of mixed greens
  • 1 cup of diced tomatoes
  • 1 cup of diced cucumber
  • 1 cup of diced bell peppers
  • 1/2 cup of red onion, chopped
  • 1/4 cup of fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, diced tomatoes, cucumber, bell peppers, red onion, and fresh cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until smooth.
  3. Pour the dressing over the salad ingredients and toss gently until well-coated.
