Description

A delightful loaf combining the sweetness of ripe bananas and the rich flavor of pumpkin for a cozy autumn treat.


Ingredients

  • 3 ripe bananas
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the bananas until smooth.
  3. Stir in the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well blended.
  4. Combine the flour, baking soda, salt, and spices in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Pour the batter into your prepared loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
