Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
- Combine pumpkin, sugar, and oil in a mixing bowl. Stir until smooth.
- Beat in eggs one at a time, ensuring they’re fully incorporated.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt until mixed.
- Gradually stir the dry ingredients into the pumpkin mixture, being careful not to over-mix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-70 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
