- 1 cup raspberries (fresh or frozen)
- 1 tablespoon sugar
- 1 cup club soda
- 1/2 cup heavy cream
- Ice
- Fresh mint (for garnish)
Instructions
- Blend the raspberries and sugar until smooth.
- Strain the raspberry puree through a fine mesh strainer if desired.
- Assemble the drink by filling a glass halfway with ice and pouring the raspberry puree over it.
- Add the club soda slowly, stirring gently to combine.
- Finish with heavy cream on top for a marbled effect.
- Garnish with a sprig of mint before serving.

Can prepare the raspberry puree in advance and store it in the fridge for up to three days.
