A festive poke cake featuring vibrant layers of red and blue gelatin with whipped frosting, perfect for summer celebrations.

- 1 box white cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large egg whites
- 1 cup blue gelatin
- 1 cup red gelatin
- 1 cup whipped frosting
- Festive sprinkles
Instructions
- Preheat your oven according to the cake mix instructions.
- Prepare the cake mix by combining white cake mix, water, vegetable oil, and egg whites in a mixing bowl.
- Bake the cake in a greased 9×13-inch pan as directed and allow to cool for about 10-15 minutes.
- Poke holes throughout the warm cake with a fork.
- Prepare the blue gelatin according to package instructions.
- Pour the blue gelatin over half the cake and let it set for about 5 minutes.
- Repeat the process with the red gelatin on the other half of the cake. Allow to set for another 5 minutes.
- Chill the cake in the refrigerator until the gelatin is fully set, about 2 hours.
- Frost the cake with whipped frosting evenly across the top.
- Add festive sprinkles on top and serve sliced into squares.
Notes
Ensure the cake cools completely before adding gelatin to avoid melting. You can make this ahead of time, adding the gelatin and frosting on the day of serving.
