Description

Decadent chocolate cupcakes filled with creamy peanut butter and topped with chocolate chip whipped frosting.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Mix the dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine wet ingredients by adding softened butter, eggs, vanilla, and milk to the dry mixture; mix until smooth.
  4. Fill the cupcake liners about two-thirds full with batter.
  5. Bake for 18-20 minutes, checking for doneness with a toothpick.
  6. Prepare the peanut butter filling by mixing together peanut butter and powdered sugar until smooth.
  7. Create a filling hole in the center of each cooled cupcake and fill it with the peanut butter mixture.
  8. Make the whipped frosting by beating heavy cream until stiff peaks form, then fold in chocolate chips.
  9. Frost each cupcake with whipped cream and drizzle additional peanut butter on top.
  10. Dig in and enjoy!

Notes

Make-ahead tips include baking the cupcakes a day in advance and storing the filling and frosting in the fridge until use. Adjust consistency when using natural peanut butter.
