- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder

- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/2 cup heavy cream
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Mix the dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine wet ingredients by adding softened butter, eggs, vanilla, and milk to the dry mixture; mix until smooth.
- Fill the cupcake liners about two-thirds full with batter.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Prepare the peanut butter filling by mixing together peanut butter and powdered sugar until smooth.
- Create a filling hole in the center of each cooled cupcake and fill it with the peanut butter mixture.
- Make the whipped frosting by beating heavy cream until stiff peaks form, then fold in chocolate chips.
- Frost each cupcake with whipped cream and drizzle additional peanut butter on top.
- Dig in and enjoy!
Notes
Make-ahead tips include baking the cupcakes a day in advance and storing the filling and frosting in the fridge until use. Adjust consistency when using natural peanut butter.
