Description

A vibrant salad featuring roasted sweet potatoes, black beans, and a zesty lime dressing, perfect for any occasion.


Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper until coated. Spread them on a baking sheet in a single layer.
  3. Bake for 25-30 minutes, or until tender and golden-brown.
  4. Combine black beans, diced red bell pepper, corn, diced avocado, red onion, and cilantro in a large bowl.
  5. Whisk lime juice, olive oil, salt, and pepper in a small bowl for dressing.
  6. Add roasted sweet potatoes to the large bowl and toss gently to combine.
  7. Drizzle with lime dressing and toss again. Serve immediately or chill before serving.

Notes

Add avocado just before serving to prevent browning. Can substitute black beans with chickpeas.
