Description

A vibrant sauce that combines roasted tomatillos, jalapeños, and olives for a smoky, tangy dip perfect for chips or as a taco topping.


Ingredients

  • 10 tomatillos, husked and rinsed
  • 2 jalapeños, stemmed
  • 1/2 cup green olives, pitted
  • 1/4 cup onion, chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place tomatillos and jalapeños on a baking sheet in a single layer.
  3. Roast for about 20 minutes until skins are charred.
  4. Remove from the oven and let cool.
  5. In a blender, combine roasted tomatillos, jalapeños, green olives, onion, cilantro, lime juice, and salt.
  6. Blend until desired consistency is reached.
  7. Serve with tortilla chips or as a taco topping.

Notes

Can be stored in the fridge for up to a week or frozen for three months. Allow to thaw before use.
