A vibrant sauce that combines roasted tomatillos, jalapeños, and olives for a smoky, tangy dip perfect for chips or as a taco topping.

- 10 tomatillos, husked and rinsed
- 2 jalapeños, stemmed
- 1/2 cup green olives, pitted
- 1/4 cup onion, chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place tomatillos and jalapeños on a baking sheet in a single layer.
- Roast for about 20 minutes until skins are charred.
- Remove from the oven and let cool.
- In a blender, combine roasted tomatillos, jalapeños, green olives, onion, cilantro, lime juice, and salt.
- Blend until desired consistency is reached.
- Serve with tortilla chips or as a taco topping.
Notes
Can be stored in the fridge for up to a week or frozen for three months. Allow to thaw before use.
