Description

A vibrant and nourishing bowl of roasted vegetables and crispy chickpeas, drizzled with creamy tahini dressing, perfect for any occasion.


Ingredients

  • 2 cups of assorted vegetables (like bell peppers, zucchini, and broccoli)
  • 1 can of chickpeas, drained and rinsed
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • For the tahini dressing:
  • 1/4 cup of tahini
  • 2 tablespoons of lemon juice
  • 2 tablespoons of water
  • 1 garlic clove, minced
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare your vegetables and chickpeas by combining them on a baking sheet with olive oil, salt, pepper, garlic powder, and paprika.
  3. Roast in the oven for 20-25 minutes, stirring halfway through.
  4. Whisk together your tahini dressing ingredients in a mixing bowl.
  5. Assemble the bowl by scooping in roasted veggies and chickpeas, then drizzling with tahini dressing.
  6. Dig in and enjoy!
