- 4 Salmon Fillets
- 8 Corn Tortillas
- 1/2 cup Fresh Cilantro, chopped
- 1 Lime, juiced
- 1/4 cup Mayonnaise or Sour Cream
- 1 Mango, diced
- 1/4 Red Onion, chopped
- 1 Jalapeño, minced
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive Oil
Instructions
- Season the salmon fillets with salt and pepper.
- Heat olive oil in a non-stick skillet over medium-high heat.
- Cook the salmon for 4-5 minutes per side until golden brown and flaky.
- Mix mayonnaise or sour cream with cilantro and lime to create slaw.
- Prepare mango salsa by combining mango, red onion, jalapeño, cilantro, and lime juice.
- Warm corn tortillas in the same skillet for about 30 seconds on each side.
- Assemble tacos by placing salmon in tortillas and topping with slaw and mango salsa.
- Serve and enjoy!
Notes
Can make slaw and salsa ahead of time for flavors to meld. Try using an air fryer for a different cooking method.
