- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 yellow onion, diced
- Soft or hard taco shells
- Shredded cheese
- Sour cream
- Chopped cilantro
- Sliced jalapeños
- Lime wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the ground meat evenly and sprinkle the taco seasoning over it.
- Add the diced onion, bell pepper, black beans, and corn on top of the meat.
- Bake in the oven for about 20-25 minutes, until the meat is fully cooked and the veggies are tender.
- Remove from the oven and stir the mixture.
- Scoop it into taco shells.
- Top each taco with shredded cheese, sour cream, cilantro, jalapeños, and a squeeze of lime.
- Serve immediately and enjoy.
