Description

Ingredients

  • 2 large potatoes, diced
  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) sloppy joe sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a splash of olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced potatoes and cook until golden and tender, about 10-15 minutes. Remove and set aside.
  3. Toss in the diced onions and bell peppers, sautéing until softened, about 5 minutes.
  4. Introduce the ground beef or turkey, breaking it up and cooking until browned, about 7 minutes.
  5. Stir in the sloppy joe sauce and let it simmer for a few minutes.
  6. Combine the crispy potatoes back into the skillet and mix with the sauce.
  7. Top generously with shredded cheese, covering the skillet until the cheese melts.
