Description

Delightfully crispy on the outside and creamy on the inside, these Smashed Roasted Cheesy Potatoes are a perfect side dish or snack, loaded with flavor and cheese goodness.


Ingredients

  • 2 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Line your baking sheet with parchment paper and place the potatoes on the sheet.
  5. Smash each potato gently using a fork or the bottom of a glass.
  6. Drizzle with olive oil and sprinkle garlic powder, onion powder, salt, and pepper over them.
  7. Bake for 20-25 minutes until crispy and golden.
  8. Remove and sprinkle shredded cheese generously on each potato.
  9. Return to the oven for an additional 5 minutes to melt the cheese.
  10. Garnish with fresh herbs and serve warm.

Notes

For added flavor, mix in different cheese varieties or spices. Leftovers can be stored in the refrigerator for up to 3 days.
