Description

A smoky, sweet peach cobbler baked in a cast-iron skillet, perfect for summer gatherings.


Ingredients

  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

  • Cinnamon or nutmeg (optional, for topping)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Prepare the peaches by marinating them with half of the sugar for 15-20 minutes.
  3. Mix the dry ingredients in a bowl: flour, remaining sugar, baking powder, and salt.
  4. Combine the wet ingredients: melted butter, milk, and vanilla extract into the dry mixture.
  5. Pour the batter into a greased cast-iron skillet.
  6. Layer the marinated peaches evenly on top of the batter.
  7. Add optional spices like cinnamon or nutmeg for extra flavor.
  8. Smoke the cobbler for 60-90 minutes until golden brown and bubbly.
  9. Cool for a few minutes before serving, ideally with vanilla ice cream.
