Instructions
- Preheat your smoker to 225°F (107°C).
- Prepare the peaches by marinating them with half of the sugar for 15-20 minutes.
- Mix the dry ingredients in a bowl: flour, remaining sugar, baking powder, and salt.
- Combine the wet ingredients: melted butter, milk, and vanilla extract into the dry mixture.
- Pour the batter into a greased cast-iron skillet.
- Layer the marinated peaches evenly on top of the batter.
- Add optional spices like cinnamon or nutmeg for extra flavor.
- Smoke the cobbler for 60-90 minutes until golden brown and bubbly.
- Cool for a few minutes before serving, ideally with vanilla ice cream.
