- 1 cup whole wheat flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 cup fresh blackberries
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the melted butter, buttermilk, and eggs until well combined.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- Carefully fold in the fresh blackberries.
- In a small bowl, mix brown sugar, rolled oats, and cinnamon to create the streusel topping.
- Fill the muffin cups about 2/3 full with the batter and sprinkle the streusel on top.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly in the pan before transferring to a cooling rack.
