Description

Deliciously indulgent muffins featuring a soft interior and a crunchy cinnamon-spiced streusel topping, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 cup fresh blackberries
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the melted butter, buttermilk, and eggs until well combined.
  4. Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
  5. Carefully fold in the fresh blackberries.
  6. In a small bowl, mix brown sugar, rolled oats, and cinnamon to create the streusel topping.
  7. Fill the muffin cups about 2/3 full with the batter and sprinkle the streusel on top.
  8. Bake for 18–22 minutes until a toothpick inserted comes out clean.
  9. Allow the muffins to cool slightly in the pan before transferring to a cooling rack.

Notes

Make-ahead tips: Mix dry ingredients the night before for quicker prep. Swap blackberries for other berries or chocolate chips based on preference.
