Description

Delight in these luscious Soft Caramel Pecan Clusters, featuring rich caramel enveloping crunchy pecans for a perfect sweet treat.


Ingredients

  • 1 cup pecans
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Toast the pecans in a skillet over medium heat for about 5 minutes, stirring often.
  2. Combine the sugar, butter, and heavy cream in a heavy-bottomed saucepan over medium heat.
  3. Stir gently until the sugar dissolves, then bring to a simmer.
  4. Boil the mixture for 5 minutes without stirring to develop the caramel flavor.
  5. Remove from heat and stir in the vanilla extract and pinch of salt.
  6. Fold in the toasted pecans until coated in caramel.
  7. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  8. Cool and allow the clusters to harden for at least 30 minutes.
