Ingredients

- ½ cup sourdough starter
- 1 cup room-temperature water
- 2 tablespoons honey
- 1½ teaspoons salt
- 3 cups unbleached all-purpose flour
- 9 cups water
- 2 tablespoons baking soda
- 2 tablespoons brown sugar
- 1 large egg yolk
- Coarse sea salt (optional)
Instructions
- Combine sourdough starter, water, honey, and salt in a mixing bowl.
- Mix in flour, kneading for 10-15 minutes.
- Cover bowl with a towel and let rise for 8-12 hours.
- Punch down the dough, divide into six portions, and roll into ropes.
- Cut ropes into 1-inch pieces and arrange on baking sheet.
- Let bites rest for about 1 hour.
- Preheat oven to 425°F (220°C) and boil 9 cups of water with baking soda and brown sugar.
- Drop bites in boiling water for 15-20 seconds, then drain.
- Brush with egg wash and sprinkle with coarse salt.
- Bake for 15-20 minutes until golden brown.
