Description

Delightful sourdough pretzel bites with a slightly crispy exterior and soft, chewy interior, perfect for sharing and indulging.


Ingredients

Scale
  • ½ cup sourdough starter
  • 1 cup room-temperature water
  • 2 tablespoons honey
  • 1½ teaspoons salt
  • 3 cups unbleached all-purpose flour
  • 9 cups water
  • 2 tablespoons baking soda
  • 2 tablespoons brown sugar
  • 1 large egg yolk
  • Coarse sea salt (optional)

Instructions

  1. Combine sourdough starter, water, honey, and salt in a mixing bowl.
  2. Mix in flour, kneading for 10-15 minutes.
  3. Cover bowl with a towel and let rise for 8-12 hours.
  4. Punch down the dough, divide into six portions, and roll into ropes.
  5. Cut ropes into 1-inch pieces and arrange on baking sheet.
  6. Let bites rest for about 1 hour.
  7. Preheat oven to 425°F (220°C) and boil 9 cups of water with baking soda and brown sugar.
  8. Drop bites in boiling water for 15-20 seconds, then drain.
  9. Brush with egg wash and sprinkle with coarse salt.
  10. Bake for 15-20 minutes until golden brown.

For best results, ensure your sourdough starter is active and bubbly before use.
