- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon salt
- 3 to 4 tablespoons sugar for rolling
Instructions
- Preheat your oven to 375°F (190°C).
- Stir together the flour, baking soda, baking powder, and salt in a small bowl.
- Cream the softened butter and white sugar in a large mixing bowl until smooth and light.
- Beat in the egg, vanilla, and almond extracts until well combined.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Roll rounded teaspoonfuls of dough into balls, then roll each ball in sugar.
- Place the coated balls onto ungreased cookie sheets, spacing them out.
- Bake for 8 to 10 minutes, or until edges are golden but centers remain soft.
- Cool the cookies on wire racks.
Notes
For a lighter option, consider substituting half the butter with unsweetened applesauce or Greek yogurt. Dough can be prepared a day in advance and chilled before baking.
