- 1 cup sourdough discard
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the peanut butter, sourdough discard, brown sugar, granulated sugar, egg, and vanilla extract until smooth.
- Whisk together the baking soda and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes, or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
