Description

Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans (Cannellini or great northern)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Red pepper flakes (optional)
  • Lemon juice (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Add the minced garlic and sauté for 1-2 minutes, stirring until fragrant.
  3. Stir in the drained white beans, letting them cook for another 3-4 minutes.
  4. Add the fresh spinach, allowing it to wilt for 2-3 minutes.
  5. Season with salt and pepper, and add red pepper flakes if desired.
  6. Drizzle lemon juice before serving for extra flavor.

Notes
