Description

A comforting dish adorned with creamy ricotta, fresh spinach, and melty mozzarella, perfect for family gatherings.


Ingredients

  • 300g pasta (penne or rigatoni)
  • 250g ricotta cheese
  • 200g fresh spinach
  • 200g mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cook the pasta according to package instructions, ensuring it remains al dente; drain and set aside.
  3. Heat the skillet over medium heat and add olive oil. Once shimmering, add minced garlic and sauté until fragrant, about 1 minute.
  4. Toss in the fresh spinach, stirring until it wilts down (roughly 2-3 minutes).
  5. Combine the cooked pasta, ricotta cheese, wilted spinach, and half of the mozzarella in a mixing bowl. Mix well.
  6. Pour in the marinara sauce, seasoning with salt and pepper. Stir until thoroughly mixed.
  7. Transfer this mixture to your baking dish, spreading it out evenly. Top generously with the remaining mozzarella.
  8. Bake for 25-30 minutes until the cheese is melty and bubbly.
  9. Garnish with fresh basil, serve hot, and enjoy!

Notes

Assemble the dish a day in advance for convenience. It can be cooked in an air fryer for 15-20 minutes at 180°C.
