Description

A delightful Strawberry Cake that perfectly embodies the essence of summer, featuring a fluffy texture and a burst of fresh strawberry flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh strawberries, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pan.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs, one at a time, mixing thoroughly after each addition.
  4. Stir in the pureed strawberries and vanilla extract.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Alternate adding the dry ingredients and milk to the wet mixture, starting and ending with the dry mix.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Garnish with chopped strawberries right before serving.

Notes

For a gluten-free version, use a gluten-free flour blend. For a dairy-free option, substitute coconut oil and almond milk.
