Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, egg, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Fold in the diced strawberries using a spatula.
- In a small bowl, beat together the softened cream cheese and powdered sugar until smooth.
- Fill each muffin liner halfway with the batter, add a spoonful of the cream cheese mixture on top, and then cover with more batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
