Description

Ingredients

  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, egg, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the diced strawberries using a spatula.
  6. In a small bowl, beat together the softened cream cheese and powdered sugar until smooth.
  7. Fill each muffin liner halfway with the batter, add a spoonful of the cream cheese mixture on top, and then cover with more batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
