Deliciously fluffy strawberry muffins filled with a rich cream cheese surprise and topped with a crunchy streusel.

- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg

- 1/2 cup milk
- 1 cup fresh strawberries, diced
- 4 oz cream cheese, softened
- 1/4 cup sugar (for filling)
- 1/2 teaspoon vanilla extract (for filling)
- 1/2 cup flour (for streusel topping)
- 1/4 cup brown sugar (for streusel topping)
- 1/4 cup unsalted butter, cold and diced (for streusel topping)
- 1/2 teaspoon cinnamon (for streusel topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Blend the melted butter, egg, vanilla extract, and milk in a separate bowl until smooth.
- Combine the wet ingredients with the dry ingredients using a spatula and mix until just blended.
- Fold in the diced strawberries gently.
- Beat the cream cheese, sugar, and vanilla extract for the filling in a small bowl until smooth.
- Spoon batter into each muffin tin halfway, add a dollop of cream cheese filling, and cover with more batter.
- Combine the ingredients for the streusel topping and sprinkle over muffins.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
You can prepare the batter the night before and refrigerate; add strawberries and filling just before baking.
