Description

Deliciously fluffy strawberry muffins filled with a rich cream cheese surprise and topped with a crunchy streusel.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, diced
  • 4 oz cream cheese, softened
  • 1/4 cup sugar (for filling)
  • 1/2 teaspoon vanilla extract (for filling)
  • 1/2 cup flour (for streusel topping)
  • 1/4 cup brown sugar (for streusel topping)
  • 1/4 cup unsalted butter, cold and diced (for streusel topping)
  • 1/2 teaspoon cinnamon (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Blend the melted butter, egg, vanilla extract, and milk in a separate bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients using a spatula and mix until just blended.
  5. Fold in the diced strawberries gently.
  6. Beat the cream cheese, sugar, and vanilla extract for the filling in a small bowl until smooth.
  7. Spoon batter into each muffin tin halfway, add a dollop of cream cheese filling, and cover with more batter.
  8. Combine the ingredients for the streusel topping and sprinkle over muffins.
  9. Bake for 18-22 minutes or until a toothpick comes out clean.
  10. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

You can prepare the batter the night before and refrigerate; add strawberries and filling just before baking.
