Description

Delicious and moist muffins filled with juicy strawberries and creamy white chocolate, perfect for breakfast or brunch.


Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and sugar in a large bowl until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and sour cream.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced strawberries and white chocolate chips gently.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan before transferring to a wire rack.

Notes

You can prepare the batter a day in advance and store it in the fridge for fresh baking. For a quicker option, consider using an air fryer.
