Description

A vibrant and refreshing sugar-free pepper jam that balances sweetness with a zesty kick, perfect for spreading on bread or serving with cheeses.


Ingredients

  • 2 cups bell peppers, chopped
  • 1 cup apple cider vinegar
  • 1 cup sugar substitute (like erythritol or stevia)
  • 1/2 cup water
  • 1 packet of pectin (sugar-free)
  • 1/2 teaspoon salt

Instructions

  1. Combine the chopped bell peppers with the water in a medium saucepan.
  2. Cook over medium heat for about 10 minutes, until the peppers have softened.
  3. Stir in the apple cider vinegar, sugar substitute, and salt, then bring to a gentle boil.
  4. Add the packet of pectin, stirring well to mix, and continue boiling for an additional 1-2 minutes.
  5. Pour the hot jam into sterilized jars and seal tightly.
  6. Allow to cool before storing in the refrigerator.

Notes

This jam lasts up to 3 weeks in the fridge; for longer storage, freeze it for up to 6 months.
