Ingredients

- 4 cups of cubed crusty bread (Sourdough or country loaf)
- 2 cups of ripe peaches, diced (yellow or white)
- 2 cups of sun-soaked tomatoes, diced (heirloom varieties)
- 1/2 cup of fresh basil leaves, torn
- 1/4 cup of red wine vinegar
- 1/2 cup of olive oil (extra virgin)
- Salt and pepper to taste
Instructions
- Combine the cubed bread, diced peaches, diced tomatoes, and torn basil leaves in a large bowl. Toss lightly.
- Whisk together the red wine vinegar, olive oil, salt, and pepper in a separate bowl until well combined.
- Drizzle the vinaigrette over the salad, gently tossing to coat all ingredients.
- Let the salad sit for at least 15 minutes to allow the bread to soak up the vinaigrette.
- Serve chilled or at room temperature and enjoy the vibrant flavors.
Notes
Best when made with stale bread to avoid sogginess. Can be customized with other fruits or added protein.
