Description

Delicious marinated chicken thighs infused with Thai spices and creamy coconut milk, grilled to perfection.


Ingredients

  • 4 Chicken Thighs
  • 3 tbsp Thai Red Curry Paste
  • 1 cup Coconut Milk
  • 2 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • 1/4 cup Peanuts, chopped
  • 4 cups Mixed Salad Greens
  • Salt and Pepper to taste
  • Oil for Grilling

Instructions

  1. Begin by marinating the chicken thighs with Thai red curry paste, coconut milk, lime juice, salt, and pepper in a mixing bowl for at least 30 minutes.
  2. Preheat your grill to medium heat and brush the grates with oil.
  3. Grill the marinated chicken thighs for 6-7 minutes on each side until an internal temperature of 165°F is reached.
  4. Prepare your salad by mixing chopped cilantro, crushed peanuts, and mixed salad greens with a drizzle of lime juice.
  5. Plate the grilled chicken thighs with the cilantro-peanut salad beside them and serve.

Notes

Marinate chicken a day in advance for deeper flavor. If no grill is available, bake at 400°F for about 25-30 minutes.
