- 4 Chicken Thighs
- 3 tbsp Thai Red Curry Paste
- 1 cup Coconut Milk
- 2 tbsp Lime Juice
- 1/4 cup Fresh Cilantro, chopped
- 1/4 cup Peanuts, chopped
- 4 cups Mixed Salad Greens
- Salt and Pepper to taste
- Oil for Grilling
Instructions
- Begin by marinating the chicken thighs with Thai red curry paste, coconut milk, lime juice, salt, and pepper in a mixing bowl for at least 30 minutes.
- Preheat your grill to medium heat and brush the grates with oil.
- Grill the marinated chicken thighs for 6-7 minutes on each side until an internal temperature of 165°F is reached.
- Prepare your salad by mixing chopped cilantro, crushed peanuts, and mixed salad greens with a drizzle of lime juice.
- Plate the grilled chicken thighs with the cilantro-peanut salad beside them and serve.
Notes
Marinate chicken a day in advance for deeper flavor. If no grill is available, bake at 400°F for about 25-30 minutes.
