Description

A comforting baked dish featuring orzo pasta, creamy ricotta, and vibrant vegetables topped with melted mozzarella.


Ingredients

  • 1 cup orzo pasta
  • 1 cup ricotta cheese
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the orzo according to package instructions until al dente. Drain and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the mixed vegetables to the skillet and cook until tender, about 5-7 minutes.
  5. Combine the cooked orzo, ricotta cheese, sautéed vegetables, and marinara sauce in a large mixing bowl. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased baking dish and top with shredded mozzarella cheese.
  7. Bake for 25-30 minutes, or until the cheese bubbles and turns golden brown.
  8. Garnish with fresh basil before serving.

Notes
