Description

A vibrant and nourishing bean salad featuring black beans, chickpeas, kidney beans, and fresh vegetables, all tied together with a zesty lime dressing.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine the black beans, chickpeas, kidney beans, diced bell peppers, chopped red onion, halved cherry tomatoes, and cilantro in a large bowl.
  2. Whisk together the olive oil, lime juice, cumin, salt, and pepper in a small bowl until fully combined.
  3. Dress the salad mixture with the zesty dressing and toss gently to coat.
  4. Let the salad sit for at least 10 minutes to allow the flavors to blend.

Notes
