Description

A refreshing summer salad combining juicy watermelon, creamy avocado, and a zesty lime dressing, topped with fresh mint.


Ingredients

  • 1/4 cup fresh mint leaves, chopped

Instructions

  1. Cut the watermelon into bite-sized cubes, placing them in a large mixing bowl.
  2. Prep the avocado by halving it, removing the pit, and dicing the flesh before adding it to the bowl.
  3. Combine the watermelon and avocado gently, avoiding mashing the avocado.
  4. Season with fresh lime juice, salt, and pepper, enhancing the flavors.
  5. Toss gently to mix without damaging the avocado.
  6. Garnish with chopped mint leaves and serve immediately.

Notes

For best results, cut the avocado just before serving and store leftovers in an airtight container for up to one day.
