Description

A vibrant and refreshing salad combining sweet watermelon, crisp cucumber, and aromatic herbs, perfect for summer gatherings.


Ingredients

  • 2 cups watermelon, cubed
  • 2 cups cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup pepitas, roasted
  • 1 tablespoon Tajín seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cubed watermelon and diced cucumber. Toss gently to mix.
  2. Add the crumbled feta cheese, followed by the chopped mint and basil.
  3. In a small bowl, whisk together the olive oil, lime juice, Tajín seasoning, salt, and pepper.
  4. Drizzle the dressing over your salad and toss gently to combine.
  5. Top your salad with roasted pepitas just before serving.
