Description

Ingredients

  • 1/4 cup Pepperoncini, chopped

  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta: Begin by bringing a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain the pasta and let it cool slightly.
  2. Mix the veggies and nuts: In a large mixing bowl, combine the cooled orzo, diced zucchini, toasted walnuts, fresh herbs, and chopped Pepperoncini.
  3. Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until smooth.
